Resumen:
This study aimed to Design and implements an optimized nutritional plan in a Child Care Center located in Guayaquil, which covered 60% of the nutritional and energy requirements of the infants assistants at this center. The first was the selection of a target group for which was calculated the energy expenditure and nutritional requirements.Nutritional plan is designed based on these requirements and then subjected to a linear optimization process by developing a mathematical model to minimize the cost but maintaining the nutritional balance. Next the menus were implemented at the Centre and conducted a comparative analysis of results to verify the economic and nutritional benefits of the new nutrition plan; finally took affective sensory tests to infants to test its acceptability to the new menus in place.
