Resumen:
This project consists of the design of the process line for slaughtering of cattle, based on FAO standards for cities with low population density; it will improve the way of butchering carcasses in Ecuador, allowing meat to obtain good organoleptic quality. The research takes into account the analysis of the area to identify where in this way may be a better location, we also review the areas within the plant to have a good distribution and hygiene, with their equipment and capabilities they required for a smooth operation, as well as for the waste management of products finally the cost estimate is obtained with a tentative budget for its implementation.
