Abstract: The objective is to elaborate a project in which shows the profitability by a feasibility analysis of the sausage cheese marketing through the currently manufactured surplus. The farm “PROLAC” basically for not having an investigate marketing area frequently use their milk production surplus from June to September of every year for develop common cheese that are actually distribute since two years and a half ago focus on the Coast region of Ecuador, as mentioned the cheddar, parmesan, gruyere and fresh cheese, this situation have generated a problem due to accumulation specially of the ones that are fast manufacturing.
